Mature cheese made from cow's milk, generally in the shape of balls often covered with aromatic herbs (thyme, rosemary...) and sometimes with spices such as chili. Chenklish is often eaten with finely chopped tomatoes, onion and olive oil and accompanied by a glass of arak. This is a common lebanese mezze dish.
